How are we already nearing the end of July?

Summer is always so amazing/busy and goes by soooo quickly! We have not had a relaxing weekend up at the cabin yet and we are FINALLY headed there.
As you will see, my inspiration has been found in and around the Northwoods of Wisco.

I’m so pumped to be up in the woods with family. My brother-in-law and his lovely lady are coming in from Denver and we can’t wait to relax in our version of paradise with them.

Beer, S’Mores, campfires, (too much) delicious food, canoeing the river and morning yoga alongside a glassy lake are the only things I need to make me happy. I love having no agenda and no expectations. Just what I need to rest my soul and reflect on the amazing summer we have had so far.

Well, the first month of 2015 has officially come to a close. And although January in Chicago isn’t exactly pleasant, it did have its highlights:

1. We’re one month closer to summer

2. I’m one year older (my birthday was on the 27th)

3. I started reading the Game of Thrones books which I’m really enjoying, although I’m pretty sure it’ll take me through 2017 to finish (and by then, they’ll probably be more books…)

Extra time in the mornings…

Wow this looks amazing! Will definitely have to make some extra time in the mornings so that I can cook this kind of breakfast!

Whenever I have extra time in the mornings (usually just the weekend), I like to take my time cooking breakfast.  This is one of my favourites… Wilted spinach Potato Rosti (grate a medium potato, squeeze out all of the moisture in a clean tea towel, add salt & peppa[push it real good] and fry in a small amount of coconut oil) Topped with a gooey poached egg (free range and organic of course)  Enjoy  A x

Chia Seed Porridge Recipe [egg free, lactose free, gluten free, sugar free]

Looks great! Have always wanted to try this- definitely need to incorporate more Chia into my diet!

Ok so this is the one of the yummiest recipes I’ve learned since starting my journey to healing the gut. It is definitely an acquired taste but for those of us who struggle with soy or wheat based porridges, this chia seed porridge is a real life saver. I also love it because it’s a high protein, egg free breakfast option. Many gluten free breakfast ideas revolve around eggs but this one is finally for those of us who can’t do eggs at all 🙂

Chia seeds are a great source of protein for people who can’t digest proteins easily. If you’re on a soft food diet then this is a great way to get your protein fix. They are very low in calories and high in antioxidants, omega-3 fatty acids and fiber.

Have a Healthy Fourth of July with these Easy Cookout Swaps

Chances are, you’ll be hosting or attending a cookout this Fourth of July weekend.  While I’m all for enjoying your favorite summertime treats in moderation, I also think you can’t go wrong with making a few easy swaps to instantly make classic cookout fare a little bit healthier.  When planning your cookout (or scoping out the food table and planning what you’re going to put on your plate), try to employ at least one of the following strategies to boost the nutritional value of your meal:

  • Opt for grilled chicken, seafood, or Portobello mushroom caps instead of burgers and dogs. If you choose chicken or a mushroom cap, you’ll save at least 4g of saturated fat and between 35-150 calories (obviously, you’ll save the most by choosing the low-calorie Portobello).  You’re also likely to feel more satisfied by choosing one of these two options over a hamburger or hotdog.

I have been having trouble with my energy levels lately, and have generally just been feeling kind of blah. Yes, I am super busy with the kids but I’ve noticed it has been so much more than that-and, I know why.

All of the junk I’ve been eating lately has really had a negative impact on my energy levels, and overall feelings of well-being-and my waistline, go figure. I touched on this a few posts ago, and have made some minor adjustments-like cutting out sodas-but, I think I need to be more aggressive if I want to see and feel some results.

That being said, today I am going to give this sugar and caffeine detox thing a try. No sugar period, including artificial sweeteners. I am only going to drink water, and unsweetened decaffeinated coffee and teas. I am feeling really good about this. I remember…
